Our Beef will range in age from 16 to 18 months at time of processing Our beef is locally processed at a USDA processing Plant. The Cost of the Locker Beef is determined by the hanging weight of the dressed carcass. The carcass will dry age for two weeks before cutting and wrapping. Dry aging promotes the tenderness of the meat, during the dry aging the carcass will shrink approximately 25 to 30 %. You can expect to get :
1/2 or Whole Beef can be custom cut to your liking 1/4 Beefs will be the standard cut Normal time you should allow after ordering is 3 - 4 weeks. Your Beef will be boxed for your pick up. Price Per pound includes the processing and the cut and wrap. Price for locker beef is $2.60
